History and Culture
Almonds have a rich cultural history, originating in the Middle East and Mediterranean regions. In perfumery, the almond note became particularly popular in the late 19th and early 20th centuries, often associated with confectionery and bakery-inspired scents. It has been a key ingredient in classic fragrances like Hypnotic Poison by Dior and continues to be used in modern niche and mainstream perfumery.
Chemistry and Molecular Structure
The characteristic almond scent comes from benzaldehyde, an organic compound with the molecular formula C7H6O. This aromatic aldehyde is responsible for the sweet, slightly bitter nutty smell associated with almonds. Synthetic almond notes often use benzaldehyde or more complex aroma chemicals to recreate the nuanced almond scent.
