In perfumery, it gained prominence in the late 19th century and became a key ingredient in many classic and modern fragrances, including Guerlain's Shalimar and numerous contemporary niche perfumes.

The primary aromatic compound in tonka bean is coumarin, a naturally occurring organic compound with a sweet, hay-like scent. Coumarin has the molecular formula C9H6O2 and is responsible for the characteristic warm, sweet profile of tonka bean.
