Zucker

Zucker hat ein süßes, kristallines und gourmandes Duftprofil. Es ruft eine reine, saubere Süße hervor, die an kandierte oder karamellisierte Noten erinnert. In der Parfümerie kann es von einer leichten, luftigen Süße bis zu einer tieferen, intensiveren karamellartigen Wärme reichen.
Herkunft und Extraktion
Zucker wird hauptsächlich aus Zuckerrohr oder Zuckerrüben durch Extraktion, Kristallisation und Veredelung gewonnen. In der Parfümerie werden Zuckernoten typischerweise durch synthetische Aromaverbindungen erzeugt, die die süße, reine Essenz von Zucker nachahmen.
Geschichte und Kultur
Obwohl Zucker selbst traditionell kein Parfümbestandteil ist, ist das Konzept süßer, essbarer Düfte seit dem späten 20. Jahrhundert in der Parfümerie beliebt. Der Gourmand-Dufttrend, der in den 1990er Jahren mit Thierry Muglers Angel begann, revolutionierte die Parfümerie, indem er nahrungsmittelinspirierte Düfte einführte, die das Wesen von Süße und Geborgenheit einfangen.
Chemie und Molekularstruktur
In der Parfümerie werden Zuckernoten typischerweise mit synthetischen Verbindungen wie Ethylmaltol hergestellt, das eine Molekularstruktur besitzt, die die süße, karamellartige Essenz von Zucker nachahmt. Diese Verbindungen interagieren mit anderen Duftstoffmolekülen, um ein komplexes, süßes Duftprofil zu erzeugen.
