Natürliche Extrakte aus Milch oder Milchprodukten können gelegentlich verwendet werden, aber die meisten Sahne-Noten werden künstlich konstruiert, um deren charakteristische glatte und süße Essenz einzufangen.
Geschichte und Kultur
Das Konzept von Sahne als Duftnote entstand mit dem Aufkommen der Gourmand-Parfümerie Ende des 20. Jahrhunderts. Parfümeure begannen, lebensmittelinspirierte Düfte zu erforschen und Düfte zu kreieren, die kulinarische Erfahrungen hervorrufen. Sahne wurde zu einer beliebten Note in Parfüms wie Thierry Muglers Angel und nachfolgenden Gourmand-Düften, die süße, tröstliche Düfte zelebrierten.
Chemie und Molekularstruktur
Sahne-Noten in der Parfümerie werden typischerweise mit synthetischen Molekülen wie Ethylmaltol (das eine süße, karamellartige Nuance verleiht), Laktonen (die milchige, cremige Eindrücke geben) und verschiedenen synthetischen Verbindungen hergestellt, die Milchprodukte und glatte Texturen nachahmen.
