Timut Pepper

Spicy Notes
Timut Pepper
Timut pepper combines a grapefruit-like brightness with dry, aromatic spice.
Origin and Extraction
The berries of Zanthoxylum armatum are harvested in Nepal. Steam distillation of the dried berries yields an essential oil. Related botanically to Sichuan pepper, but a distinct material.
History and Culture
Also called Timur pepper, it is used as a spice in Nepali cooking.
Chemistry and Molecular Structure
The essential oil is a mixture of volatile compounds, rather than one aroma molecule. Its composition depends on the material and distillation.
