The scent is typically recreated through synthetic accords in perfumery, since direct extraction yields limited aromatic material. Some producers use CO2 extraction of roasted hazelnuts to capture a more authentic aroma.
History and Culture
Hazelnuts have been a staple food in Europe for thousands of years, with archaeological evidence of large-scale harvesting dating back 9,000 years in Scotland. They hold symbolic meaning in Celtic mythology as nuts of wisdom and poetic inspiration. In perfumery, hazelnut emerged as a gourmand note in the early 2000s, riding the wave of increasingly sophisticated food-inspired fragrances that moved beyond simple vanilla and chocolate.
Chemistry and Molecular Structure
The characteristic roasted hazelnut aroma is largely produced by Maillard reaction products during roasting. Key molecules include filbertone (5-methyl-2-hepten-4-one), which is the most important impact compound, along with pyrazines, furanones, and various aldehydes. Filbertone alone can evoke a strong hazelnut impression and is the primary building block for synthetic hazelnut accords in perfumery.
